i'll be good tomorrow


So for the last 3 weeks I ate salmon, shrimp, and spinach for pretty much every meal (except the ones with eggplant or asparagus). I didn't drink any soda, I went to the gym 5 days each week (and did an hour of cardio each time). And do you know how much weight I lost in those three weeks? 1 pound. One friggin pound.

So this weekend I surrendered to fried food, carbs and aspartame (only I'm feeling more sluggish than rebellious) and this tasty fruit pizza. So far it's the only thing that's been worth it, and I'm taking the left-overs to share with my coworkers tomorrow so I don't finish it single-handedly. ("Operation: Get back on track" starts tomorrow.)

Anyway, here's the simple recipe if you want to try it out! It is so, so good.

Fruit Pizza:
- 1 roll refrigerated sugar cookie dough
- 1 package light cream cheese
- 1 container fat free cool whip
- strawberries, kiwi, and bananas (or raspberries, mandarin oranges, and mangos. Whatever.)

Directions:
Preheat oven to 350. Squish the dough into an oven-safe tart pan or the like and bake about 15 minutes. Let it cool about 15 minutes, while slicing the fruit and mixing the topping. For the topping, just mix the cream cheese and cool whip til it's smooth. Spread it on, arrange the fruit, then refrigerate for about 30 minutes. Enjoy!
