"veg pledge" week 1

Here's my menu for my first all-vegetarian week. I plan to take the leftovers to work during the week and eat them for lunch. Yum yum!

{This week is a suuuuper busy week- last week of class, plus a few after-work obligations, so I'm not making anything time-intensive. The following week I have a break between classes- break out the tempeh and curry powder!}

{Weekly Dinner Menu}

Saturday: Vegetarian pizza {with spinach, mushrooms, peppers, tomatoes and cheese}

Pasta with Artichokes and Tomatoes

'Meatball' Subs

Asian Noodles with Peanut Sauce

Wednesday: Left-overs

Thursday: Veggie sandwiches {whole wheat bread, veganaise, tomato, avocado, cucumber and cheese}

Friday: Quesadillas with black beans, corn, peppers and cheese
