"veg pledge" week 2
This week, here's the menu:
Sunday: Vegetarian lasagna {cooking for the fam- happy Mother's Day to the best mom EVER!}
Monday: Veggie stirfry with tofu
Tuesday: Leftovers
Wednesday: Soy burger tacos
Thursday: Left-overs
Friday: Asian noodles with peanut sauce {didn't get around to making this last week}
So far it's been easy eating veg; yesterday I had a softball practice and we grilled out afterward- I brought my own Boca burger along and a couple other people wanted to try them, too. The biggest challenge is cooking two meals, as suspected. I am down 2 lbs this week which may or may not be directly related. All those veggies certainly can't hurt, though!
